Description: Baking Powder is a white free flowing powder that comprises mixtures of substances intended for leavening of baked goods, which release carbon dioxide during dough making and baking. These substances include:
A carbon dioxide carrier which provides the carbon dioxide
One or more leavening acids which facilitate the release of the carbon dioxide
And, if necessary, separating agents such as starch which prevent preliminary carbon dioxide generation caused by the reaction of acidic and alkaline components.
Applications: Cakes, Quick Breads, Pasteries, Bakes, Specialty Breads, Cookies.
