Coconut Flour Oatmeal Cookies

    • 2 Cups Packed Brown Sugar
    • 1 Cup Softened Unsalted Butter
    • 2 tsp Vanilla Extract
    • 2 Eggs
    • 7 tbsp Pamela’s Coconut Flour
    • ¼ tsp Salt
    • 2 tsp Baking Powder
    • 3 Cups Old-Fashioned Oats


      1. Preheat oven 350 F
      2. Using a hand or stand mixer, beat together brown sugar and softened butter until smooth and creamy
      3. Mix in the vanilla
      4. Add the eggs one at a time
      5. In a separate bowl, mix the flour, salt, and baking powder
      6. Slowly add the dry ingredients into the creamed mixture. Mix until just combined
      7. In two batches, add the oats into the bowl of a food processor
      8. Pulse 3-4 times until the oats are broken down a bit but not enough to ground them into a powder
      9. Add in the oats to the cookie mixture until combined
      10. Using a spoon or cookie scoop, drop the dough on a cookie sheet covered with parchment paper or a greased cookie sheet. Leave 2-3 inches in between each cookie as they will expand
      11. Bake for 9-10 minutes
